Cupcake Day Made Easy

1. Support your local bakery by purchasing some cupcakes to sell at your Cupcake Day event.
2. Forget the long bake time and skip to the fun decorating part by purchasing some sponge cakes from your local supermarket! (No one will ever know you bought them, everyone will be distracted by your awesome cupcake designs!).
3. You can even use a cupcake packet mix! (Technically that’s still baking, right?).
4. You can use your trusty family recipe!
5. OR recruit some family and friends and have a ‘Sunday Funday’ family bake off! (You can take it a step further and see who can raise the most money - Best-selling cupcake wins!).

If you still want to put your baking skills to the test but are worried about the expenses, try out this really easy and inexpensive recipe.

• Serves 12
• 10 mins preparation
• 20mins to cook

Ingredients

• 1 3/4 cups self-raising flour
• 2/3 cup caster sugar
• 2 eggs
• 1/2 cup milk
• 1 tsp vanilla extract

Method

1. Preheat oven to 200C. Line a 12-hole medium muffin tray with paper cases.
2. Combine self-raising flour and caster sugar in a large bowl. Whisk butter, eggs, milk and vanilla extract in a bowl. Add butter mixture to flour mixture and gently stir until combined.
3. Divide batter evenly between paper cases. Bake for 15-20 minutes or until cases are cooked through when tested with a skewer.
4. Transfer to a wire rack to cool. When cold, decorate as desired.
